Roasted Tomato Garlic Bread with Burrata

Crispy, buttery garlic bread. Creamy burrata. Sweet, jammy roasted tomatoes. Fresh basil. And a generous drizzle of Nan’s Lala Garlic Vinaigrette to bring it all together.

Created by @munchymoodz, this Roasted Tomato Garlic Bread is everything we want in an easy appetizer. The tomatoes slowly roast until blistered and bursting, then get layered over warm, crispy garlic bread and creamy burrata.

The finishing touch? A generous drizzle of Lala Garlic Vinaigrette. Its bold, savory garlic flavor and bright acidity cut through the richness of the butter and burrata while bringing out the sweetness of the roasted tomatoes.

It’s simple, shareable, and one more delicious reminder that Nan’s is made for so much more than salads.

Ingredients

For the Roasted Tomatoes

  • 10 oz (280g) cherry tomatoes
  • Olive oil
  • Salt and freshly cracked black pepper, to taste
  • 1 teaspoon Italian seasoning

For the Garlic Bread

  • ½ loaf Italian bread
  • 3 tablespoons butter, softened
  • 2–3 garlic cloves, minced
  • Small handful fresh parsley, finely chopped
  • 1 teaspoon chili flakes

For Assembly

Instructions

1. Roast the tomatoes.
Preheat the oven to 350°F. Add the cherry tomatoes to a baking dish and drizzle generously with olive oil. Season with salt, black pepper, and Italian seasoning, then toss to coat.

Roast for approximately 45 minutes, or until the tomatoes are soft, blistered, and beginning to burst.

2. Prepare the garlic butter.
In a small bowl, combine the softened butter, minced garlic, chopped parsley, and chili flakes. Mix until well combined.

3. Bake the garlic bread.
Slice the Italian loaf in half lengthwise and use one half for this recipe. If you’d like to use the entire loaf, simply double the garlic butter ingredients.

Spread the garlic butter evenly over the cut side of the bread. Bake at 350°F for 12–18 minutes, or until the bread is golden brown and crisp around the edges.

4. Assemble.
Tear the burrata and spread it evenly over the warm garlic bread. Spoon the roasted tomatoes over the top, making sure to include some of those flavorful roasting juices.

5. Finish with Lala Garlic.
Drizzle generously with Nan’s Lala Garlic Vinaigrette and garnish with fresh basil leaves.

Slice and serve immediately while the bread is warm and crispy and the burrata is perfectly creamy.
